Today we have a guest blog post from the registered nurse at the Sentara Starr Hill Health Center- one of the coalition’s partners. The Sentara Starr Hill Health Center is located in the Jefferson School City Center. They help guide and support people to live a healthier life. Check out the recipe below for an easy and healthy snack for the whole family! The recipe has been adapted from PB&J Fund.
Easy Kale Chips
1 Bunch of Kale
Olive oil
Sea salt
Parchment paper
Sheet pan
Wash kale thoroughly and let dry. Cut parchment paper to fit on the sheet pan. Cut kale into chip/bite size pieces and arrange on the sheet pan. Slightly drizzle all of the kale with olive oil. Sprinkle the kale lightly with sea salt. Bake in the oven at 350 degrees for approximately 6 – 7 minutes. Set oven timer and watch closely while cooking. Don’t overcook. When kale turns dark green it is ready. Enjoy!

Kale is from the cabbage family and is very versatile. Kale is full of many nutrients and vitamins. Kale can be cooked, prepared as a salad and baked into a healthy snack. For more facts about kale click here.
