Apple and Fennel Salad

Hello Everyone!


This week, we are creating two dishes to enjoy together! We are roasting veggies and creating a salad out of a few simple ingredients. Our first dish is an apple and fennel salad with a honey-lemon vinaigrette with an arugula and baby spinach base. This was really fun to create because I haven't cooked much with fennel! Using it as a simple herb was a nice introduction to its licorice-like taste coupled with the apples.

As always, we encourage you to take this salad to this next level. Add whatever is in your kitchen, but remember: Keep It Simple! Often it just takes a few ingredients to make a dish go from your everyday cuisine to something you've never imagined. 


That brings me to our second dish, roasted beets and carrots. Now, I don't know about you, but I love roasted veggies. They are a simple way to spruce up a plate with some color and texture, as well as yummy nutrients. Beets and carrots are jam-packed with antioxidants, fiber, and Vitamin A. They also offer a sweet touch to savory meals. I love making a large quantity of roasted veggies at once and then meal prepping them throughout the week with other dishes, reheating them briefly in the oven to get that crunchy texture.
