Veggie Wraps with Bread and Roses!

This week at the Bread and Roses Community Kitchen we prepared two easy to assemble dishes. These both go well as a light snack or following a time of fasting such as first in the morning or after a long day at work. I added some personal notes on the recipe cards this week, specifically for the Decorated Fruit Plates. This recipe offers us a chance to be creative and take some moments of reflection about what goes into the creation of our food.
I introduced a well-known skill called the matchstick cut this week. A lot of different veggies can be cut into thin strips- wweet potato, zucchini, even squash or gourd. What are other vegetables that we can cut matchstick style?
I encourage you to take these recipes and tailor them to what is available to you. Try different color combinations when building your rolls, like working with only red bell peppers, carrots, and red apples for a Vitamin C kick, adding in some rich dark greens and perhaps a yellow squash. These dishes not only make for a great photo opt, but they also offer increased ways to diversify nutrients you are taking in.
