Brown Rice Stir Fry
This week at the Bread and Roses Community Kitchen, we made Stir Fry with brown rice!
Making a stir fry is really nice because you can mix and match a bunch of different vegetables. As far as tastes and flavors go, I say go above and beyond! Make it spicy by adding some fresh peppers or some hot sauces. It is easy to add beans, tofu, or meat to the pan to get some protein on the plate. When adding meats to a stir fry is just simply cook your meat on medium heat before cooking your vegetables. When you are working with meats, just be sure to remove them from the heat before cooking the vegetables and add them back to the pan when mixing in the rice at the end. This will ensure that your meat is not under or overcooked. We recommend lean meats such as chicken, or shrimp. We have seen recipes that use just about anything in your fridge so experiment with leftovers!
What is the difference between brown rice and white rice, you ask? Brown rice has more food value than white rice. This means that brown rice has more protein and dietary fiber. The extra protein and fiber keeps you fuller for longer! Brown rice is a whole grain, which can help lower someone’s blood sugar- which is really important if someone has or is preventing type 2 diabetes. Because brown rice is less processed than white rice it takes a few more minutes to cook. A way to help shorten the cooking time is by soaking the rice before cooking it. If you know you are going to be cooking it the next day, soak it overnight to help soften the rice. Drain the soaking water and follow the next instructions.
