Stuffed Eggplant
This week at Bread and Roses we made stuffed eggplants with lean ground turkey and vegetables. Eggplant is one of my favorite vegetables to cook with because it is so versatile as far as taste. Some of my favorite recipes are eggplant parmesan or simply sliced and roasted in the oven. I've heard many people complain about how watery eggplant can be, but there is an easy fix! To reduce the water intake, soak the eggplant in water and a little bit of salt, let it sit for 15 minutes, then dry them before cooking. I recommend experimenting with the vegetables you fill your eggplant bowl with. Butternut squash, leafy greens, homemade tomato sauce, carrots, the options are endless! This meal offer a flexible way to get your nutrients and it tastes DELICIOUS.
