Hello Everyone!
This week we had a little “Muffin Mania” at the Bread and Roses Community Kitchen, playing around with savory and sweet ideas for muffins. The two recipes I want to share with you all are Mini Frittata Muffins and "Sweet" Blueberry Muffins. Both of these recipes offer easy to assemble snacks that can complement a busy schedule or make for a light breakfast. In creating these dishes, I had a lot of fun trying different flavors.
Although I've never really cooked with turnips and radish, they were so easy to incorporate into this dish. I also tried roasting the radishes, YUMMY. Don't limit yourself to how I prepared these dishes, but look for ways that you can recreate them with your own special twist. I recommend sticking to low carb, low sodium, low-fat content ingredients when constructing your muffins. For those who prefer meat, I'd recommend lean turkey, deli meat, or leftover chicken you're trying to finish before it gets old. You can prepare meats the same as you would prepare the vegetables. Do not put raw meat into your muffins because they will not cook evenly.
For the blueberry muffins, just remember to not over mix your batter. Be sure to use muffin cups and don't feel limited to blueberries. This recipe offers an almost generic base for muffins that you can swap blueberries out for generally any fruit, such as apples or grapefruit. There are so many ways to have fun with "sweet" muffins. I'd recommend using all-purpose flour if you prefer fluffier, soft muffins as the whole wheat flour was a bit tough. I encourage you all to truly be intentional in your kitchen and try healthier alternatives to dishes.
