Simple Fajitas

This week at the Bread and Roses Community Kitchen, we made fajitas!

Why order take-out when you could cook your restaurant favorites right at home! For this week’s cooking class we are making chicken and vegetable fajitas with fresh pico de gallo salsa. 

You may notice that there are no quantities on your recipe. Don’t worry, you got this! For the pico de gallo, your taste buds are the judge. Once you mix all the ingredients together, simply taste it, then adjust from there! As for the fajitas, let’s think about our portion sizes. An adult portion of chicken is 3-4oz, so calculate according to your family! Vegetables can get tricky, but we are shooting for 1 cup of cooked vegetables per person. I normally plan for ½ onion per person and 1 bell pepper per person. Honestly though, the more veggies the better, right!? Don’t skimp out on those! Here is a chart to help you remember your serving sizes for this recipe. 

Fajita Bowl serving sizes: 

  • 3-4oz chicken per serving

  • 1 cup of vegetables per serving 

  • ½ cup brown rice per serving 

  • Pico de gallo, as much as you want!
